Chicken Taco Pizza

This is a very fresh and delicious meal; perfect for weeknight as it comes together very easily.

Serves 4 – Adapted from Food Network Magazine

chicken and seasoning:

  • 2 boneless chicken breasts
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon chipotle chili powder (optional)
  • salt and pepper
  • 1 tablespoon canola oil (or the oil of your choice)

pizza:

  • 1 lb store bought pizza dough
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar cheese

salsa:

  • 2 avocados, diced
  • 2 tomatoes, diced
  • 1/4 diced red onion
  • 1/3 cup chopped cilantro
  • juice of 1 lime
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • salt and black pepper
  • sour cream to serve

Preheat the oven to 450F. If you have a pizza stone, you can start preheating it.

Start by preparing the chicken and its seasonings. In a small bowl, combine all the seasoning ingredients and set aside.

Put the chicken on a cutting board, cover it with cling wrap, and pound it until very thin.

Sprinkle the seasoning on both sides of the chicken. Heat a 10 inch skillet, add the oil, then the chicken over medium heat. Cook for a few minutes on one side, flip and cook the other side.

Take it out of the pan, cut it into 1/2 inch thin strips, cover it with foil, and set it aside.

For the pizza, roll out the pizza dough to your desired shape, round or rectangle. Add the dough to the pizza stone or a baking sheet. Sprinkle with the cheeses, and

cook in the oven for about 8-10 minutes until pizza is cooked and cheese is bubbly.

Meanwhile, while the pizza is cooking, prepare the salsa. In a medium bowl, combine all the ingredients.

To serve, cut up the pizza into slices. Add a slice to a plate, top with a few pieces of the chicken,

then the salsa, and sour cream.
