At least once a year it’s a good idea to make your own applesauce (a perfect foil for latkes, by the way); yes, it’s annoying, but technically so easy, and it’s far tastier than store-bought.
- 12 Granny Smith apples
- 1 1/2 cups sugar
- 1/4 cup fresh lemon juice
Peel and coarsely chop apples;
place them in a large pot. Add the sugar and lemon juice.
Heat on low, stirring occasionally, for 10 minutes; increase heat to medium and cook, stirring occasionally for about 25 minutes, or until the apples are soft.
Using a potato masher, mash until you reach the applesauce consistency you like (we’re partial to chunky). Eat warm or let cool; it keeps for up to a week in the refrigerator.
