Quesadillas with Caramelized Onions, Mushrooms, and Spinach, with a side of Guacamole and Salsa (including kid-friendly guacamole)

Quesadillas with caramelized onions, mushrooms, and spinach, with a side of Guacamole and Salsa

We love this meal! I make it once a month on the weekends as it takes a bit of time to cut up all the vegetables. I make a slightly different version for my kids as you will see below.

Quesadillas with caramelized onions, mushrooms, and spinach:

  •  2 small onions, sliced
  • 1 tspn sugar
  • 1 big package mushrooms, washed and sliced (I used portobello mushrooms but any kind will do)
  • 3 garlic cloves, minced
  • 1 package baby spinach
  • 1 package whole wheat tortillas (I used the ones from Trader Joes)
  • Monterey Jack cheese, shredded
  • salt & pepper

Add onions

Melt half a tablespoon butter / oil in a preheated skillet, add the onions, 1 tspn sugar, salt and pepper.

Caramelized Onions

Turn heat to low until the onions are slightly caramelized (about 15 mins).

Add mushrooms

Meanwhile, melt half a tablespoon butter in another preheated skillet, add the mushrooms, garlic, salt & pepper.

On medium-low heat, let them release their juices, stirring from time to time.

Mushrooms done

Keep cooking them until all the juices are evaporated. Set aside.

Add spinach

When the mushrooms are done, melt a tspn of oil / butter in the same pan, add the baby spinach, a tiny pinch of salt,

Wilted spinach

and stir for a couple of minutes until it’s wilted. Set aside.

While the mushrooms and onions are cooking, you can make the salsa and guacamole at the same time as they both include most of the same ingredients.

Salsa:

  • 2 diced tomatoes
  • 4 diced green onions
  • 1/4 cup chopped cilantro
  • 1 minced garlic
  • juice of half a lime
  • salt & pepper
  • diced jalapeno (optional)

Salsa done

Mix everything together.

Guacamole:

  • 1 and 1/2 diced avocados (I used the other half to make the kids’ guacamole. See below)
  • 4 diced green onions
  • 1/4 cup chopped cilantro
  • 1 minced garlic
  • juice of half a lime
  • salt & pepper
  • diced jalapeno (optional)

Guacamole done

Mix everything together.

Now you can start putting the meal together.

Add cheese

In a preheated skillet, add the tortilla, arrange the cheese on top,

Add onions

followed by half of the onions,

Add spinach

then half the spinach,

Add mushrooms

then half the mushrooms.

Flip!

Add another tortilla on top, then flip with a large spatula. You want both sides to be lightly browned and crispy. Repeat again to make another quesadilla.

Cut each into 4 pieces with a large knife, and serve with the salsa and guacamole.

For the kids:

My kids don’t like onions and mushrooms in their quesadilla. So, I make it for them with just the cheese and cut up wilted spinach.

I also make a milder guacamole for them. I got this idea from Jessica Seinfeld’s book, Deceptively Delicious, and modified it slightly:

Guacamole for kids

I mash up half an avocado with a fork, add 1 Tbspn plain yoghurt, 1 tspn lime juice, and 1/2 garlic clove minced, a small pinch of salt. I then mix everything together.
